The chanterelle mushroom, also known as the chanterelle, is an edible mushroom highly appreciated for its flavour and aroma. Its scientific name is Cantharellus cibarius. This mushroom is distinguished by its yellow or orange colour, its funnel shape and its wavy margin. The underside of the cap has wrinkles or folds that resemble sheets. It grows in coniferous and deciduous forests, especially in acidic soils, and is found from late spring to autumn. The chanterelle is known for its delicate, slightly fruity flavour, as well as its fragrance reminiscent of apricots.

Chanterelle Risotto

Ingredients:

 

300g arborio rice

500g chanterelles

1 small onion

2 garlic cloves

1 litre vegetable stock

100ml white wine

50g grated parmesan cheese

Olive oil

Salt and pepper to taste

Instructions:

 

Heat the vegetable stock and keep it warm.

Clean and cut the chanterelles into pieces.

In a large frying pan, sauté the chopped onion and garlic in a little olive oil until translucent.

Add the chanterelles and cook for a few minutes.

Add the rice and stir for a couple of minutes to soak up the flavours.

Pour in the white wine and allow it to evaporate.

Start adding the hot stock, a ladleful at a time, stirring constantly. Wait for the liquid to be absorbed before adding more.

Continue this process until the rice is cooked and creamy.

Remove from heat and add the Parmesan cheese. Stir well and adjust salt and pepper.

Serve immediately.
